Canceling a class leaves it up on your customer facing schedule, showing as cancelled. Deleting it removes it entirely.

To cancel or delete a class or series of classes, click Classes > Schedule > locate the class > click the dropdown menu to the right > click one of the following:
Cancel this class
Cancel or Delete a recurring class
Delete this class
If you chose 'cancel or delete recurring class', choose from the following dropdown > decide if the classes should be canceled/deleted after a certain date > choose whether to add a note to the registers customers affected.
