From your left hand nav, click On-Demand > Video Library > locate the collection you'll be editing.

Choose Actions > Edit

Update the price, then turn on the 'Override' toggle.

Click Save and you're all set.

Note: if you need a special expiration date set per video, this can be done on a per video basis.
